The philosophy of artisanal craftsmanship, being in tune with nature, and practicing minimal intervention drives the work both in the fields and in the winery. The activities align with the phases and rhythms of the moon, and everything is done by hand—from pruning to vine training, from planting cover crops to harvesting. The crops are grown without irrigation or chemical products.
Our people honor the traditions of their regions, like hand tilling on Mount Etna and preserving specific training methods—spurred cordon for Sangiovese in Montalcino and bush training for Nerello Mascalese and Nerello Cappuccio on Etna.
Nature
Staying true to tradition and the knowledge of the past, both regions showcase strictly native grape varieties and vineyards of exceptional quality. In Montalcino, the Sangiovese vines boast an average age of about 25 years, while on Mount Etna, the Nerello vines range from 20 to a century old.
The choice of locations was also driven by a commitment to biodiversity. In Castelnuovo dell’Abate, the vineyards are framed by forests and Mediterranean vegetation— including olive trees that yield the company’s olive oil—while natural springs feeding two small ponds help keep the soil cool even during the hottest months. Meanwhile, on Mount Etna, terraced vineyards coexist harmoniously with prickly pear plants and an ancient chestnut grove.
Craftsmanship
In the winery, fermentation happens naturally, without any added yeast or temperature control. We trust the organic evolution of our small batches and rely wholeheartedly on the native microbiota of our region.
Aging is done with a light hand on the wood, solely to enhance the wine’s natural evolution. Our cultivation, harvesting, and production methods follow the principles of biodynamic agriculture, aiming to accentuate the essence of the terroir and transfer its energy, authenticity, and natural character into the wine.
Sustainability
Our sustainable approach drives the principle of lightweight glass bottles, minimizing the impact of production and transportation, the use of one-piece corks, and alternatively, the use of both natural rubber and fully recyclable capsules featuring an innovative adhesive derived from sugar cane to replace traditional petroleum-based adhesives.
Among other eco-friendly solutions, the introduction of zero-impact polynature® capsules made from a renewable plant-based polymer, which is biodegradable and recyclable and holds UNI EN 13430:2005 certification.”
