SILENZIO 2024 was crafted from the harvest of September 11, 2024. The grapes were pressed using a traditional wine press and left to ferment spontaneously. They underwent a seven-month aging process in stainless steel, followed by manual bottling via gravity. The outcome is pure and joyful Sangiovese, boasting a delicate aromatic bouquet with distinctive hints of savoriness and minerality on the palate.

The wine ages in stainless steel for nine months and is bottled “à la pure” – entirely by hand, using gravity.
The sulfure dioxid levels are kept to a minimum.

Process
Sostanza is born from a philosophy of pure respect and a non-interventionist approach to winemaking that amplifies its authenticity. The grapes are 100% organically farmed Sangiovese. They are vinified with 20% whole clusters and undergo a 48-hour semi-carbonic maceration to capture the fresh, fruity essence of the grape.
Alcoholic fermentation occurs spontaneously in stainless steel, driven solely by native yeasts in a process free from temperature control, emphasizing the genuine voice of the varietal. Extraction, achieved through brief, repeated pump-overs and a single délestage, enhances the wine’s finesse and definition. After fermentation, an extended maceration on the skins adds a further layer of precious complexity, bringing the total cuvaison to 18 days.
Following a 48-hour static settling, the wine is transferred to second-use French oak barrels, where it completes a spontaneous malolactic fermentation. It then matures for 15 months in these same barrels, followed by a final 3-month refinement in third-use tonneaux. This skillfully calibrated journey polishes the wine without overpowering it, preserving the forthright personality of the Sangiovese and its vibrant tension.
IGT Toscana Sangiovese 2022
Sostanza is the second wine to join the LILIA MARIA LANI collection, made from 100% Sangiovese. In the glass, it shows a vibrant ruby red color with subtle garnet reflections. The nose reveals a complex bouquet of red fruits and citrus notes, with hints of orange peel and spices. On the palate, the wine is harmonious and elegant, showcasing great flavor with excellent acidity.

Process
The winemaking process begins with filling the fermentation tank with 20% whole grapes, followed by a 48-hour semi-carbonic maceration to enhance fruity aromas. Fermentation occurs in stainless steel with wild yeasts and without temperature control. Extraction is achieved through brief, repeated punch-downs, with a single délestage when the cap of pomace rises. Post-fermentation, the wine macerates on the skins for a total of 21 days. During pressing, only the free-run wine is collected, allowed to settle statically for 48 hours, and then transferred to second-use French oak barrels for spontaneous malolactic fermentation.

Process
This wine is the product of an agronomically complex vintage. It began wet and rainy but culminated in a triumph of sun, which prevented water stress and, 24 months after the harvest, has resulted in a wine of exemplary completeness.
The grapes, harvested in the second week of September, achieved impeccable phenolic maturity. In the glass, the color is a pale ruby, with the characteristic transparency of authentic Sangiovese. On the palate, a captivating hint of incense introduces a palette of aromas that seamlessly range from cherry to white peach, wild garlic, and dog rose. The warmth of the vintage softened the overall impression, imparting nuances of chestnut honey and wisteria. The tannins are crisp, with a firm grip and an austere finish, as only Sangiovese can deliver.
Malolactic fermentation took place in mature oak tonneaux, where the wine aged for 21 months. This process, combined with an additional 4 months of bottle aging before release, smoothed out the vintage’s typical edges, allowing the unique terroir to express itself with elegance and precision.
IGT Toscana Rosso 2022
PAZIENZA has a shy yet warm and luminous character, expressed through balsamic and minty notes, layered with hints of forest floor. To the most attentive noses, it may even evoke the petrichor of summer rain.
A testament to its Mediterranean roots, this is a warm, robust wine with a powerfully structured mid-palate and striking three-dimensional depth.

Process
Harvested with passion on September 3rd under the lingering summer sun, the grapes were brought to the cellar and meticulously destemmed by hand. A small portion was gently foot-trodden, while the rest of the berries were left whole.
Fermentation took place in old tonneau barrels repurposed as artisanal fermenters, progressing with remarkable steadiness, much like the malolactic conversion. The wine then aged in well-seasoned oak barrels for 15 months.
Though it initially showed radiant expressiveness, just weeks after bottling, PAZIENZA entered an almost “adolescent” phase of introversion. To emerge from this, it required over 18 months of bottle rest before revealing its true voice.

The Extra Virgin Olive Oil, obtained from the Correggiolo, Moraiolo, and Olivastra varieties, represents the heart and soul of our olive grove in Castelnuovo dell’Abate, as well as the artisanal care of the La Seggianese mill in Seggiano.
The olives are rigorously hand-picked, ensuring the selection of the best fruits and helping to preserve their quality and freshness.
The crushing takes place within 24 hours of harvesting, a crucial aspect that guarantees the maximum preservation of aromas and nutrients.
Thanks to cold extraction, the flavors and fragrances remain intact, offering a product of the highest quality.
